Fact: pineapples are one of nature’s sweetest gifts. They’re bright, refreshing, and beautifully tart!
Fact: margaritas are one of the cocktail world’s greatest gifts. They’re strong, sweet, and salty! (Plus, they go GREAT with guacamole).
Fact: July 24th is is National Tequila Day, so we figured we should pair up some of summertime’s greatest gifts and make the ultimate July treat: did someone say pinearita party?!
Now, before we get ahead of ourselves, we realize that some people like their margaritas sweet, and others like them with a little more of a kick. We’ve got you covered! We are going to do pineapple margaritas (pinearitas) two ways!
Charred Chipotle Pinearita
This delectable cocktail has all of the sweet and tart that you could want from pineapple, but with a smoky chipotle twist. You will need:
- Orange liquor
- Pineapple juice
- Lemon juice
- Orange juice
- Chipotle chili powder
- Fresh sage
Step one: char it!
First, take cut pineapple and grill or charbroil it.
Step two: prepare the rims
Mix salt and chipotle chili powder together and wet the rim of your glasses with lime. Then, dip the rims in the salt mixture to form a thick coating! Now, put your glasses to the side and fill a shaker with ice.
Step three: muddle
Take a bowl and put in your charred pineapple, simple syrup, and seven sage leaves. Muddle it together to get all of the flavors mixing and mingling.
Then, add this mixture to your shaker.
Step four: add in the liquor
Add three ounces of tequila, and one ounce of orange liquor into your shaker.
Step five: add your citrus
Now, add in one ounce of lime juice, a half ounce of orange juice, and a half ounce of lemon juice. Once everything is in the shaker, shake vigorously until a frost appears on the outside of your glass.
Step six: finishing touches!
Pour your mixture into your prepped glasses and then top with fresh pineapple juice.
Finally, garnish your glass with a piece of charred pineapple and fresh sage.
Looks pretty good! Now, for the sweeter version…
Roasted Vanilla Pinearita
For sweeter folks, the roasted vanilla pinearita is full of warm vanilla notes and roasted pineapple goodness. To make it, you will need:
- Pineapple juice
- Fresh mint
Step one: make simple syrup
First, cut a pineapple and place in a roasting pan. Split and scrape a vanilla bean, and then spread on the pineapple.
Coat generously with sugar, and then roast for 45 minutes on 425 degrees F. After roasting, drain the liquid from the pan into a jar and voila – pineapple vanilla simple syrup!
Step two: prep your glasses
While your syrup cools, pulse fresh mint, salt, and sugar in a food processor. Then, wet the rims of your glasses with lime and dip in the minty sugar mixture.
Step three: tequila
Fill your glasses with ice and then put an ounce (or two) of tequila in each.
Step four: sweeten it!
Now, add a half ounce of your delicious vanilla syrup to each glass…
…and then top with fresh pineapple juice!
Step five: finishing touches
All that’s left to do now is garnish with some pineapple fronds and vanilla bean…
…and enjoy your pinearita whether spicy, sweet, or both. We’re not judging 😉
